Pour appuyer ses propos, il cite une \u00e9tude scientifique. Si cette \u00e9tude am\u00e9ricaine a bien mis en \u00e9vidence la cr\u00e9ation de substances potentiellement toxiques pour les consommateurs lors de la cuisson de p\u00e2tes avec du sel iod\u00e9 et de l\u2019eau d\u00e9sinfect\u00e9e avec de la chloramine, il existe des moyens pour \u00e9viter la production de ces substances g\u00e9notoxiques. Par ailleurs, si l\u2019usage de la chloramine est courant aux \u00c9tats-Unis, ce produit issu de la r\u00e9action entre le chlore et l\u2019ammoniac n\u2019est pas utilis\u00e9 dans de nombreux pays europ\u00e9ens, comme la Belgique, pour d\u00e9sinfecter l\u2019eau courante. D\u00e8s lors, les risques pour la sant\u00e9 des consommateurs belges sont limit\u00e9s, en absence d\u2019\u00e9tudes sp\u00e9cifiques compl\u00e9mentaires indiquant le contraire.<\/strong><\/p>\n<p>Une vid\u00e9o publi\u00e9e par \u00ab\u00a0clem_le_diet\u00a0\u00bb ou\u00a0\u00ab\u00a0Cl\u00e9ment\u00a0di\u00e9t\u00e9ticien\u00a0\u00bb a recueilli plus de 1,7\u00a0million de vues sur Instagram et plus de 39.000 \u00ab\u00a0J\u2019aime\u00a0\u00bb depuis sa publication le 8\u00a0novembre dernier. Dans\u00a0ce \u00ab\u00a0r\u00e9el\u00a0\u00bb, l\u2019instagrameur alerte sur les dangers potentiels de cuire des p\u00e2tes avec de l\u2019eau du robinet et du sel iod\u00e9.<\/p>\n<p>\u00ab\u00a0Tu cuis tes p\u00e2tes avec de l\u2019eau du robinet, alors \u00e9coute bien. Si tu ajoutes du sel iod\u00e9 pendant la cuisson, l\u2019iode peut r\u00e9agir avec la chloramine pr\u00e9sente dans l\u2019eau\u00a0et former des sous-produits de d\u00e9sinfection toxiques. N\u00e9anmoins, on sait depuis longtemps que l\u2019eau d\u00e9sinfect\u00e9e par chloration est g\u00e9notoxique.\u00a0<\/em><em>Parmi les plus de 700 sous-produits de chloration identifi\u00e9s, on d\u00e9nombre au moins une centaine de substances g\u00e9notoxiques et une vingtaine de substances canc\u00e9rog\u00e8nes chez l\u2019animal<\/em>.\u00a0<em>C\u2019est d\u2019ailleurs pour r\u00e9duire l\u2019exposition \u00e0 ces innombrables substances g\u00e9notoxiques que certains \u00e9tats ont opt\u00e9 pour la d\u00e9sinfection avec la chloramine (chloramination)<\/em>.\u00a0\u00bb<\/p>\n<p>\u00ab\u00a0<em>Plusieurs \u00e9tudes ont d\u00e9montr\u00e9 une association entre l\u2019exposition \u00e0 l\u2019eau d\u00e9sinfect\u00e9e par chloration (par ingestion mais aussi par inhalation et contact cutan\u00e9 en prenant une douche ou un bain) et le risque de cancer de la vessie. Aux USA et dans l\u2019Union europ\u00e9enne, la proportion de cancer de la vessie due aux trihalom\u00e9thane (THM) (<\/em>ndlr\u00a0: les THM se forment<em>\u00a0<\/em>lorsque le chlore utilis\u00e9 pour d\u00e9sinfecter l\u2019eau r\u00e9agit avec les mati\u00e8res organiques naturelles (v\u00e9g\u00e9tation, feuilles mortes,\u00a0etc.) pr\u00e9sentes dans l\u2019eau)\u00a0<em>serait d\u2019environ 10% et 5%, respectivement. Ce risque toutefois ne serait significatif que lorsque la concentration des THM dans l\u2019eau potable d\u00e9passe largement 20 microgrammes\/litre (la norme en Belgique est de 100 microgrammes par litre). Tout r\u00e9cemment des \u00e9tudes ont rapport\u00e9 des associations entre les THM (surtout les THM contenant du brome) et un risque accru de cancer colorectal ou d\u2019une forme de leuc\u00e9mie chronique.
